When mug cakes first made their way onto the internet in the late aughts, I regarded them with a sense of suspicion and derision. Could a microwaved cup of sludge really stir the heart like a freshly baked cake? Some desperate night in college, I gave it a whirl with an internet recipe in a TJ Maxx mug, and decided the answer was no.
All these years later, I’m ready to soften my position.
