I’m Having a Celtuce Summer
While most greens surrender to a vinegar-y dressing in seconds, celtuce can truly hang. Crisp, juicy, and just a little nutty, with a texture somewhere between radish and water chestnut, this leggy beauty is a sleeper hit in the produce aisles. Though it’s technically a type of lettuce, celtuce is grown for its thick, sculptural stalk, which holds up stoically in stir-fries, salads, pickles, and fridge leftovers.
